IT STARTED WITH THE DOUGH
Chef Gus didn't go to culinary school to learn how to make empanadas. He learned in his grandmother's kitchen, watching the way the dough was folded, pinched, and fried.
But he didn't want to just recreate the past. He wanted to Remix it.
Starting in a literal garage in 2021, selling directly to friends via Instagram, the operation grew. The "Everything Bagel Empanada" broke the internet (locally speaking). The demand outgrew the garage.

We honor traditional Cuban flavors, but we aren't trapped by them. We add Jersey grit, hip hop culture, and modern technique.

Cubita Café opens on Franklin Ave. Designed to feel like a living room for the culture.
